What is it?
Japanese rice (or sushi rice) is the staple of the Japanese diet and consists of short translucent grain. When cooked, it has a sticky texture such that it can easily be picked up and eaten with chopsticks. Japanese Rice (or sushi rice) is most commonly used in the preparation of sushi but it is also used to produce sake.
Any cooking recommendations?
Thoroughly wash 2 cups of rice to release exces starch, drain and put into a pot. Add 2 cups of water, stir lightly and let stand for 30 minutes. Cover pot and bring to the boil over high heat. Once it boils. reduce to low heat and simmer for 20 minutes.
Remove from heat and let stand, covered for 15 minutes. Put rice into a non-metallic tray and sprinkle with 80ml of sushi vinegar. Stir with gentle chopping motion using a non-metallic spoon.
Allow the rice to cool before making sushi.
