An ancient grain with a modern following — spelt (also known as Dinkel, Triticum spelta) has been cultivated for thousands of years and is prized for its nutty flavour, easy digestibility, and impressive nutritional profile. This hulled spelt grain is biodynamically grown right here in New Zealand on one of NZ's first certified organic farms, which has been growing spelt for over 15 years. How to Use It
Cook the whole grain as a hearty base for grain bowls, salads, soups, and stews — similar to farro or barley. Soak overnight then simmer for 45–60 minutes until tender. Alternatively, mill or grind into spelt flour for bread, cakes, biscuits, scones, and pizza bases. Spelt flour can be used in place of ordinary wheat flour, though bread dough may take a little longer to rise.
