What are they?
Lentils have been part of the human diet for the last 13,000 years. Red lentils are actually hulled, halved yellow lentils. They become very soft when cooked. Lentils are an edible pulse from the seed pod of the lentil plant with a warm, nutty flavour. Dietary staple throughout India and the surrounding countries and a versatile vegetarian favourite.
What are the nutritional benefits?
Lentils contain high levels of fibre and protein whilst being low in fat and calories. They also contain folate, potassium and iron.
Where can I use them?
Red lentils become softer than other lentils when cooked so are more commonly used in curry, soups or traditional Indian dal. Relatively quick to cook in under 30 minutes, they can be used in a huge variety of dishes. Use them as a meat replacement in chilli's, tacos and veggie burgers. They easily absorb the flavours of the ingredients they are cooked with.
Anything important?
Certified organic.
Rinse before cooking. Add one cup of lentils to four cups of boiling water. Cover and simmer for 20-25 minutes or until tender.

These are a dinner staple for us. They provide such nourishment, while blending almost undetectably into sauces and stews.
