Organic White Quinoa
Grown high in the Andean plateaus of Peru, white quinoa has been harvested by indigenous peoples for over 4,000 years. Sacred to the Incas who called it chisaya mama — 'mother of all grains' — it is technically a seed (a pseudo-cereal related to beetroot and spinach), but cooks and eats like a grain. Certified organic, gluten-free, and one of the most nutritionally complete plant foods available.

How to Cook It
Rinse quinoa under cold water before cooking to remove natural saponins (which can taste bitter). Add 1 cup quinoa to 2 cups water or stock, bring to the boil, then reduce heat and simmer for 12–15 minutes until the water is absorbed and the germ ring appears. Fluff with a fork and serve.
