How to use it
This quick-cook fine polenta is ready in minutes. Once cooked, it pairs beautifully with almost anything — meat, seafood, or vegetables. Serve it as a thick, creamy porridge in place of rice or pasta, or let it cool, then slice and fry, grill, or bake. Use it in cakes layered with sweet or savoury fillings, grill and top with mushrooms and tomatoes bruschetta-style, or shape leftover polenta into balls, patties, or sticks and fry until golden for a classic crostini di polenta.
To cook: Add 1 cup of polenta and a pinch of salt to 4 cups of boiling water, stirring continuously. Simmer for 5 minutes. Remove from heat and fold in a knob of butter and grated parmesan, if desired.
