What is it?
Finely ground corn (also known as cornmeal) that is versatile, tasty and filling. Gluten-free and now a staple on many high-end restaurant menus.
Used as early as the 15th century, it is traditionally used in Italian cooking
What are the nutritional benefits?
A source of protein and a good source of fibre.
Where can I use it?
Traditionally a slow-cooked dish, this is the quick version which means you can cook it up in just a few minutes. Once cooked, polenta makes a good match with nearly anything, meat or seafood. You can make it to a thick, creamy consistency as a rice or pasta replacement. It can either be eaten freshly cooked, as a thick porridge, or it can be cooled and then sliced and fried, grilled, or baked. In cake form, it can be layered with a sweet or savoury filling and baked. It can be grilled and topped with mushroom and tomatoes, like a bruschetta. Leftover polenta can be shaped into balls, patties or sticks and fried until golden brown and crispy for a delicious crostini di polenta treat.
TO COOK: Add 1 cup of polenta and a pinch of salt to 4 cups of boiling water, stirring continuously. Simmer for 5 minutes. Take off heat and fold in a knob of butter and grated parmesan cheese, if desired
