Slow Cooker Black Bean Lentil Chilli

Perfect dinner option for those busy weekdays, takes less than 15 minutes to prepare yet tastes delicious!

 

Prep Time: 10 min  /  Cook Time: 6 hrs  /  Total Time: 6hrs 10min  /  Servings: 8  / Recipe Source: Apples for CJ www.stephaniesain.com 

Ingredients:

1 cup dried green lentils, rinsed

1 can black beans, rinsed

1 onion, chopped

2 cloves garlic, chopped

1/2 green or red bell pepper, diced

1 can diced tomatoes

2tbsp tomato paste

2 tbsp chilli powder 

1/2 tbsp cumin

dash of cayenne pepper 

1/2 tsp garlic powder

1/2 tsp oregano

salt & pepper to taste

3 cups vegetable broth

1/2 cup water

 

Instructions:

1. Put all of the above ingredients into a slow cooker and cook on high heath 5-6 hours

2. Taste for salt & pepper

3, Serve with any of your favourite toppings (steamed rice, baked potatoes..etc)
